Swami’s Café is a reasonably priced restaurant with large portions, servicing customers during breakfast and lunch time. As most JPCatholic students know, it is located on Escondido Grand, directly across the way from the school’s academic building. Founder and owner Jamie Osuna began Swamis on a little property in Encintas, selling smoothies and fresh juices. Since then, the business has grown significantly, with an expanded menu and nine restaurant locations in the San Diego area.
Swami’s goal is to make the customers happy. They continually work to provide good customer service and a family oriented atmosphere. The manager said, “If the customer service is not good, even though your food is good, it doesn’t matter. You can’t be successful if the customer service is nothing.”
Swami’s prides itself on its organic and fresh produce. Each restaurant receives produce from different places, and so, the menu differs from location to location. Often, Jamie will allow cooks freedom as to what they place on their menus.
Below is a remake of one of Swami’s fresh and famous salads, the Greek salad with salmon. This recipe is awesome for anyone looking for a healthy and quick lunch!
Here’s what you will need:
- ½ head of Romaine lettuce
- 1 Salmon
- 4 cherry tomatoes
- ½ a cucumber
- Feta cheese
- ⅓ of a red onion
- 1 slice of Pita bread (optional)
- Balsamic vinaigrette
So first, preheat the oven to 400 degrees and lightly grease a baking sheet so that the salmon does not stick while cooking. Then, lightly season both sides of the salmon with salt and pepper and place it in the oven for 11-12 minutes. *Optional: Add lemon to give it a zesty flavor. Next, cut up the rest of the vegetables and sprinkle it evenly throughout a salad bowl. The salmon at this time should be out of the oven and put to cool for about a minute or two. Once cool, place the salmon on the salad and pour the dressing over it.
